Cappadocia: Cooking Together :-)

Although pasta is thought to be an Italian dish it’s eaten pretty much throughout the Mediterranean region. Turks make fine sheets of pasta which they cut into squares before wrapping small squares of meat. The result is similar to Ravioli but far more compact. The dish is called Mantı, (not to be confused with Mantar which are mushrooms).

Preparing Mantı is a communal and sociable enterprise

Fine pastry is created using a long thin rolling pin.

Meat is then folded into the pastry by hand

The whole process is as much an opportunity for conversation as the preparation of supper.
